I reall...Such an informative and interesting post! I really appreciated the pictures and explanations of the fermenting machine. Being a First Generation Korean Adoptee, raised by White Americans, it wasn't until I was in my 20's that I tasted my first kimchi. And wow, baby, it was like going home ~ love at first bite.
