Yup...I'm still trying to eat my way through the
giant zucchini...look at the size of that thing, it's as wide as my refrigerator (though I do have an apartment sized refrigerator...still, it's gotta be 18" long at least half that in diameter). Anyhow, here's a pic of the zucchini, pepper, and tomato omelet I had for dinner tonight (heavy on zucchini). The recipe used a mere three slices of it...I still have a few more growing in the garden (ah...the pressure...like I need more stress in my life).

Seriously, we have many recipes but none really consume the volume that we grow. We (family of 7) could easily get by with two productive zucchini plants if I was confident that the squash bugs and cucumber beetles would not pre-maturely kill the plants. Hence, I plant more than we need just in case.
