Food Philosophy 1917

This is a 1917 print by the illustrator, Frederick G. Cooper. Is it just me or is this just as appropriate today (maybe even more appropriate) than it was 93 years ago?

Amazingly relevant.

But why "less wheat"?

I wonder about the wheat, too?

maybe it had to do with wheat being quite energy intensive, and thus using lots of fossil fuels (as did meat) so the reduction was for conserving oil... (at least transportation of that wheat...)

I wish I could find a larger version suitable for print, I kinda want to get this up in my co-op!
