Adobo seasoning...there are probably as many variations of this mix as there are cooks who make it. This is a version which I like and use often, especially while cooking on-the-job. It's classic for chicken (pollo adobo), but this all-purpose seasoning is great on fish, tofu (yes, tofu!), roast potatoes, and vegetables. It is readily available in stores but it is so easy to make...simply mix everything together. Once you make this you'll wonder why you haven't before.
Condimento de adobo
Makes about ½ cup
2 tablespoons kosher salt
2 tablespoons granulated onion
2 tablespoons granulated garlic
1 tablespoon paprika
1 tablespoon ground oregano
1 tablespoon ground cumin
1 tablespoon ground black pepper
Mix all the ingredients together and store in an air-tight container.
